I love blueberries.  Plus, it is a great way to sweeten something naturally!

This is my newest recipe…

2 cups whole wheat flour

1/2 cup unbleached white flour

2 eggs

2 cups milk, plus more if you need it (I use rice milk)

1 tsp salt

2 tsp Stevia sweetner (powder form)

1 cup blueberries

dash of cinnamon

I just mixed it all in one big bowl, stirring in blueberries as the last ingredient.    Spray griddle with cooking spray.  Cook like you would normal pancakes.

It made about a dozen yummy pancakes.  All four of my boys loved them!  You don’t even need syrup if you put a little butter on top while they are hot!
